quinoa salad with fruit and nuts

2 cups water
1 cup quinoa, rinsed well and drained\
1/2 cup pitted chopped dates
1/2 cup mixed dried fruit, chopped
3 scallions, chopped
3 tablespoons chopped cilantro
3 tablespoons pine nuts, toasted
2 tablespoons fresh lime juice
1 tablespoon olive oil
2 teaspoons honey
1/2 teaspoon salt

bring water to boil, add quinoa cover and cook until tender and water is evaporated about 15 mintues. transfer to large bowl and stir in dates, mixed fruit, scallions, cilantro and pine nuts.

whisk together the lime juice, oil, honey and salt. pour over the quinoa mixture, toss to coat.

mango quinoa salad

1 cup Quinoa, rinsed well under warm running water and drained
2 cups of water
2 tablespoons fresh lime juice
1 tablespoon orange juice
1 tablespoon cider vinager
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1 ripe mango, peeled and cut into 1/2 inch cubes
4 scallions, chopped
1/4 cup red onion, finely chopped
1/4 cup raisins
1/4 cup walnuts, toasted and coarsely chopped (i have also used pine nuts here)

combine the quinoa and water in a saucepan; bring to a boil. cover, reduce the heat, and simmer until the water has been absorbed, about 10 minutes. Transfer to a large bowl and let cool slightly.

whisk together the lime juice, orange juice, vinegar, oil, and salt. add the mixture to the bowl with the quinoa, along with the mango, scallions, onion, raisins and walnuts; toss to coat.

"French" meat loaf

4 lg eggs (3 hard boiled, 1 for the mix)
1 1/4 pounds ground turkey (you can use any ground meat)
1/2 cup rolled oats
1 carrot coarsely grated
1 granny smith apple peeled and coarsely grated (i never bother with the peeling)
4 scallions thin sliced
1 1/2 teaspoons curry powder
For the top
3 tablespoons apricot preserves
1 tablespoon ketchup

combine the egg, turkey, carrot, apple, scallions and curry powder
spoon 1/2 (or a little less) into 9x5 loaf pan
make lengthwise trench and place the 3 (i use 4 sometimes) peeled hard boiled eggs in trench
cover with the remaining turkey, make sure eggs are covered
blend apricot preserves and ketchup brush (pour) on top

Bake at 350 45-55 minutes
let stand 5 minutes before pouring off any liquid

I know this one sounds weird... but it is one of my current favorites! (if cut into 8 slices each one has about 165 calories)
